Today we make Chocolate & Almond butter cookie

Hello lovelies,

So I’m not sure if you’ve heard but Pret now do a vegan cookie! I’m not going to lie the first week they came out I bought one every time I walked past a Pret. Now if you’re not from London I can tell you that I walked past a Pret at least twice a day!! The cookies are the size of my hand and they’re so soft and chewy! And they’re VEGAN! I can’t believe that just 5 years ago people looked at me confused when I told them I was vegan and now vegan cookies available on every street?! Can’t wait to see what the next few years has in store…

Inspired by this I created a recipe for some chocolate and almond butter cookies. They’re no where near as good as Pret’s but totally satisfy the cookie needs when at home. Soft chewy yumminess!

 

Ingredients

  • 1/2 cup almond butter
  • 1/2 coconut sugar
  • 1 tsp vanilla extract
  • 1 cup plain flour
  • 2/3 cup cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup oat milk (or any other alternative)
  • 40g dark chocolate cut into small chunks

 

Method

  1. Whisk the almond butter and coconut sugar together until smooth
  2. Add the vanilla extract
  3. In a separate bowl mix the dry ingredients (plain flour, cocoa powder, baking powder, salt)
  4. Combine the dry ingredients with the almond butter mix
  5. Work the mixture together with your hands into crumbs
  6. Add the oat milk slowly and keep mixing until you achieve a doughy consistancy
  7. Cut the chocolate into small pieces then mix into the dough
  8. Line baking tray and preheat the oven to 220 degrees
  9. Create small balls of dough and press down slightly with fingers to create a flat disc shape
  10. Bake for 20 minutes
  11. Cookies might come out softer than usual but should harden once cooled down
  12. Enjoy
