So I’m not sure if you’ve heard but Pret now do a vegan cookie! I’m not going to lie the first week they came out I bought one every time I walked past a Pret. Now if you’re not from London I can tell you that I walked past a Pret at least twice a day!! The cookies are the size of my hand and they’re so soft and chewy! And they’re VEGAN! I can’t believe that just 5 years ago people looked at me confused when I told them I was vegan and now vegan cookies available on every street?! Can’t wait to see what the next few years has in store…
Inspired by this I created a recipe for some chocolate and almond butter cookies. They’re no where near as good as Pret’s but totally satisfy the cookie needs when at home. Soft chewy yumminess!
Ingredients
- 1/2 cup almond butter
- 1/2 coconut sugar
- 1 tsp vanilla extract
- 1 cup plain flour
- 2/3 cup cocoa powder
- 1 tsp baking powder
- 1/4 tsp salt
- 1/4 cup oat milk (or any other alternative)
- 40g dark chocolate cut into small chunks
Method
- Whisk the almond butter and coconut sugar together until smooth
- Add the vanilla extract
- In a separate bowl mix the dry ingredients (plain flour, cocoa powder, baking powder, salt)
- Combine the dry ingredients with the almond butter mix
- Work the mixture together with your hands into crumbs
- Add the oat milk slowly and keep mixing until you achieve a doughy consistancy
- Cut the chocolate into small pieces then mix into the dough
- Line baking tray and preheat the oven to 220 degrees
- Create small balls of dough and press down slightly with fingers to create a flat disc shape
- Bake for 20 minutes
- Cookies might come out softer than usual but should harden once cooled down
